Mauritian Baja Recipe

Prepare this delicious Mauritian Appetizer easily at home and serve it with chutney or hot sauce accompanied by a hot cup of tea.

Ingredients

  • 200 g of flour (besan)
  • 100 g all-purpose flour
  • 100 g all-purpose flour
  • a pinch of bicarbonate
  • 1 medium finely chopped onion
  • 1/2 cup coriander leaves, finely chopped
  • 1/2 cup spring onions, finely chopped
  • 1 tsp. ginger paste
  • 1 tsp. garlic paste
  • 1 finely chopped green chili (optional)
  • Water
  • Salt to taste
  • Oil for deep frying

Instructions

  1. Combine besan, bicarbonate, flour, salt, and food coloring powder in a mixing bowl. Combine thoroughly.

  2. Stir in the water until the batter is uniform and free of lumps. (If you're in a hurry, you can leave the batter to rest for 10 minutes.)

  3. Mix in the onions, scallions, and coriander leaves.

  4. Add vegetable oil to a frying pan for deep frying. When the oil is hot and ready, drop the batter into it and stir it with a spoon.

  5. Once golden, remove and strain to remove any excess oil.

  6. Serve immediately with chutney along with a cup of tea and enjoy.
